Larry's “I'll Just Have a Little” Sausage & Peppers

The Classic Italian-American

Larry has never had “a little” sausage and peppers in his life.

He starts with one sausage, adds another “because it's already there,” then discovers a third hiding underneath the peppers. Fifteen minutes later, Larry is asleep in a chair with his belt mysteriously loosened two notches.

Best for: Sunday dinner and accidental naps.

Ingredients

  • 1½ lbs Italian sausage — half hot, half sweet
  • 3 bell peppers — red, yellow and green
  • 2 yellow onions
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ cup dry white wine
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • Salt and freshly ground black pepper
  • Fresh Italian parsley

Larry's Instructions

  1. 1

    Brown the sausage.

    Heat olive oil in a large skillet over medium-high heat. Brown the sausages on all sides. They don't need to be completely cooked yet. Remove them and set aside.

  2. 2

    Bring in the vegetables.

    Slice the peppers and onions into thick strips. Add them to the same skillet and cook for 8–10 minutes until softened and beginning to caramelize.

  3. 3

    Add the good stuff.

    Add garlic, oregano and red pepper flakes. Cook for about 1 minute.

  4. 4

    Wine time.

    Pour in the white wine and scrape all those browned sausage bits from the bottom of the pan.

  5. 5

    Reunite the family.

    Return the sausages to the skillet. Cover and simmer for about 15 minutes, until the sausages are cooked through.

  6. 6

    Finish it Larry-style.

    Remove the lid and cook another 3–5 minutes so the peppers get slightly charred and the sauce reduces. Finish with parsley and serve immediately.

Larry's Rule: Never overcook the peppers. Larry likes them tender with a little char — not something you'd find in a retirement-home cafeteria.

The Larry Five-Napkin Sausage & Pepper Sandwich

A Sandwich With Structural Problems

There are sandwiches, and then there are sandwiches requiring structural engineering.

Larry insists the proper ratio is 70% sausage, 25% peppers and onions, and 5% bread desperately trying to hold everything together.

If sausage juice isn't running down your arm by the second bite, Larry considers it an appetizer.

Best for: Game day, family parties and ruining a perfectly good shirt.

Ingredients

  • 6 hot or sweet Italian sausages
  • 2 red bell peppers
  • 1 green bell pepper
  • 2 large onions
  • 3 cloves garlic
  • Olive oil
  • ½ cup marinara sauce
  • 6 crusty Italian rolls
  • 8–10 slices provolone
  • Freshly grated Parmesan
  • Calabrian chili, optional

Larry's Instructions

  1. 1

    Cook the sausage.

    Grill or pan-sear the sausages until browned on the outside and cooked through.

  2. 2

    Caramelize the peppers and onions.

    Slice the peppers and onions and sauté them in olive oil for about 10 minutes. Add garlic during the final minute.

  3. 3

    Prepare the bread.

    Slice the Italian rolls almost completely through and lightly toast them.

  4. 4

    Build the beast.

    Slice each sausage lengthwise and pile it onto the roll. Add an unreasonable amount of peppers and onions, a spoonful of marinara and plenty of provolone.

    Broil.

    Place under the broiler for 60–90 seconds until the cheese is bubbling and beginning to brown.

  6. 6

    Finish.

    Add Parmesan and a little Calabrian chili if you want some heat.

Larry's Rule: If you can eat the sandwich without leaning forward over your plate, you didn't put enough sausage and peppers on it.

Napkins required: Five minimum.

Larry's Sunday Gravy Situation

The Sausage That Never Makes It to Dinner

Every Sunday, Larry announces that he's going to “just check the sauce.”

This involves bread. Then another piece of bread. Then a sausage somehow disappears from the pot.

By the time dinner is served, Larry has already eaten dinner. He just refuses to admit it.

Best for: Sundays, holidays and catching Larry eating directly over the stove.

Ingredients

  • 2 lbs sweet Italian sausage
  • 4 bell peppers
  • 2 large onions
  • 5 cloves garlic
  • 1 28-ounce can San Marzano-style tomatoes
  • ½ cup red wine
  • 1 teaspoon oregano
  • Fresh basil
  • Olive oil
  • Fresh Parmesan
  • Salt and freshly ground pepper
  • Crusty Italian bread

Larry's Instructions

  1. 1

    Brown the sausage aggressively.

    Heat olive oil in a heavy pot or Dutch oven. Brown the sausages on every side. Remove and set aside.

  2. 2

    Cook the vegetables.

    Add sliced onions and peppers directly into the sausage drippings. Cook until softened and caramelized. Add garlic and cook for another minute.

  3. 3

    Deglaze.

    Pour in the red wine, scrape the bottom of the pot and reduce the wine by roughly half.

  4. 4

    Make the gravy.

    Crush the tomatoes by hand and add them to the pot along with oregano, salt and pepper.

  5. 5

    Return the sausage.

    Put the sausages back into the sauce and simmer gently for 45–60 minutes.

  6. 6

    Finish.

    Add torn fresh basil and Parmesan just before serving. Serve with crusty Italian bread, polenta or rigatoni.

Larry's Secret: Make it the day before. It's even better reheated.

King Sausage Larry's Royal Grill

Sausage, Peppers & Parmesan From His Majesty's Barbecue

Larry approaches the barbecue like a medieval king surveying his kingdom.

The sausages are his army. The peppers are his loyal subjects. The onions are there because someone told him he needed vegetables.

Larry stands over the grill with tongs in one hand and a beer in the other, declaring: “Nobody touches the sausage until I say it's ready.” Five minutes later, Larry has eaten two.

Best for: Summer cookouts and establishing dominance over the family barbecue.

Ingredients

  • 6 Italian sausages
  • 3 bell peppers
  • 2 red onions
  • 4 cloves garlic, minced
  • Olive oil
  • ½ lemon
  • Freshly grated Parmesan
  • Fresh Italian parsley
  • 1 teaspoon oregano
  • Crushed red pepper
  • Salt and pepper

Larry's Instructions

  1. 1

    Fire up the kingdom.

    Heat the grill to medium-high.

  2. 2

    Prepare the vegetables.

    Cut the peppers and onions into large pieces. Toss with olive oil, salt and pepper.

  3. 3

    Grill everything.

    Place the sausages, peppers and onions on the grill. Turn the sausages regularly until browned and cooked through. Grill the vegetables until tender with plenty of char around the edges.

  4. 4

    Slice and combine.

    Slice the sausage into large pieces and combine with the grilled peppers and onions in a cast-iron skillet.

  5. 5

    Add the Larry treatment.

    Add garlic, oregano, crushed red pepper and a generous squeeze of fresh lemon. Top with freshly grated Parmesan.

  6. 6

    Back on the grill.

    Place the skillet back onto the grill for another 2–3 minutes. The sausage juices, Parmesan, garlic and charred vegetables will come together into a ridiculous little sauce at the bottom of the skillet. Finish with parsley and another handful of Parmesan.
