Instructions

  1. 01

Brown the mushrooms. Cook mushrooms in 1 tablespoon oil in a wide pan for about 8–10 minutes until their liquid evaporates and edges brown. Add garlic for the last minute. Transfer to a bowl.

  2. 02

Soften onion and toast rice. Warm the remaining oil (use 1 tablespoon for the mushroom version; otherwise 2 tablespoons) in a heavy pan. Soften onion for about 5 minutes. Add rice and stir for 2 minutes; do not rinse the rice.

  3. 03

Add broth gradually. Add a ladle of hot broth, stir regularly and add more as it is absorbed. Keep at a gentle simmer. Allow roughly 18–25 minutes after the first ladle; taste grains for a tender exterior and a slight firm bite. You may not need all the broth. Follow the vegetable step for its addition timing.

  4. 04

Finish off the burner. Fold in mushrooms with the butter and cheese. Reserve a few browned slices for the top. Remove from direct heat before adding cheese. Add hot broth as needed so the risotto spreads softly rather than standing in a mound. Taste for salt and pepper and serve immediately.

Larry’s rule: Hot broth, a gentle simmer and a loose finish — not a fixed stock countdown.

Before you cook

What to know about Mushroom Risotto

What it is

Mushroom Risotto is a rice recipe rooted in Italian home cooking. This version makes 4 servings in 50 min and focuses on the technique that gives the dish its characteristic texture and flavor.

Why this method works

The method builds flavor in a deliberate order: brown the mushrooms, then soften onion and toast rice, then add broth gradually. Following that sequence keeps the main ingredients distinct while bringing the finished dish together.

Key ingredients and what they do

  • 1 1/2 cups Arborio or Carnaroli rice — provides the recipe's main structure, so its cooking time and texture matter.
  • 5 cups low-sodium vegetable broth, kept hot and added as needed — supports the dish's balance, texture and regional character.
  • 1 small onion, finely chopped — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 2 tablespoons olive oil — builds the savory foundation and carries flavor through the dish.

Smart substitutions

For the most reliable result, keep the main ingredient and technique unchanged. Swap only like for like, then adjust salt, moisture and cooking time to taste.

Make ahead and leftovers

Measure and prepare the ingredients ahead, but finish the rice close to serving. Risotto loses its flowing texture when held or reheated.

What to serve with it

  • Serve immediately while the rice is at its best texture.
  • Follow with a simply cooked vegetable or light main course.

Larry’s why

Why Larry adds the broth a ladle at a time

Rice releases starch through friction, and friction only happens when the liquid is low enough for the grains to rub against each other. Dump the broth in all at once and you get rice soup with no creaminess. Keep the broth hot, add a ladle, stir until the pan nearly dries, repeat.

Larry’s rule: Hot broth, low liquid, constant stirring.

Serving and substitutions

Hot broth, a gentle simmer and a loose finish — not a fixed stock countdown. Follow the measured recipe first; substitutions change texture and timing. Review all ingredients for allergies. Serve rice as a main, bread and salad alongside a main, and sauces in quantities suited to the dish.

Preparation and storage

Refrigerate perishable ingredients promptly and use cooked leftovers within 3–4 days at 40°F or below. Reheat cooked leftovers throughout to 165°F; cold salads and yogurt bowls are served cold, not claimed to reheat well.

Mushroom Risotto: common questions

Can I use dried mushrooms?
Yes, but use a recipe specifying their weight and soaking liquid; they are not a same-weight replacement for fresh mushrooms.
How long does mushroom risotto take?
Allow 50 min. These are estimated home-cooking times, not measured kitchen-test results. Follow the texture and doneness cues in the steps.
Can I scale this recipe?
Use the serving control to adjust ingredient amounts. A larger batch does not automatically cook in the same pan or time; use appropriate equipment and check doneness.
