Instructions

  1. 01

Prepare the base. Heat the oven to 375°F (190°C). Lightly oil a 9-by-13-inch baking dish from the measured oil. Cook short pasta, such as penne or rigatoni in boiling water about 2 minutes short of the package instructions; drain. The pasta must be cooked before assembly, not placed in the tray dry.

  2. 02

Prepare the filling. Moisten breadcrumbs with milk for 5 minutes, then gently mix with beef, egg and oregano. Form 20 meatballs. Brown in the oil in batches, then add the measured tomato sauce and simmer gently until several centers reach 160°F (71°C), roughly 12–18 minutes depending on size. Browning alone is not doneness; use 165°F for any poultry mixture.

  3. 03

Assemble the tray. Fold drained pasta with the cooked meatballs and their sauce and measured sauce, black pepper and half the shredded low-moisture mozzarella. If sauce was already added during filling preparation, use that same sauce, not another batch. Spread in the prepared dish; top with remaining shredded cheese and Parmesan.

  4. 04

Bake the warm assembly. Bake at 375°F (190°C) about 20–25 minutes until hot through and the cheese has melted with some golden patches. If the top colors too fast, loosely cover with foil. All meat or fish must have met its safe internal temperature in the filling step. This estimate is for freshly assembled, warm ingredients, not a chilled tray.

  5. 05

Serve and store. Rest about 5 minutes and divide into six servings. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C), in shallow containers. Keep refrigerated at 40°F (4°C) or below and use within 3–4 days. Reheat leftovers throughout to 165°F (74°C).

Larry’s rule: Cook moisture out of vegetables and follow the stated meat or fish temperature; melted cheese alone cannot establish doneness.

What to know about Meatball Casserole

What it is

Meatball Casserole is a pasta recipe rooted in Italian home cooking. This version makes 6 servings in 60 min and focuses on the technique that gives the dish its characteristic texture and flavor.

Why this method works

The method builds flavor in a deliberate order: prepare the base, then prepare the filling, then assemble the tray. Following that sequence keeps the main ingredients distinct while bringing the finished dish together.

Key ingredients and what they do

  • 12 oz short pasta, such as penne or rigatoni — provides the recipe's main structure, so its cooking time and texture matter.
  • 2 tablespoons olive oil — builds the savory foundation and carries flavor through the dish.
  • 3 cups prepared tomato sauce — supplies acidity, sweetness and the recipe's tomato base.
  • 1 1/2 cups shredded low-moisture mozzarella — contributes salt, richness and structure; its moisture and temperature affect the finish.

Smart substitutions

For the most reliable result, keep the main ingredient and technique unchanged. Swap only like for like, then adjust salt, moisture and cooking time to taste.

Make ahead and leftovers

Prepare the measured ingredients ahead, but cook and sauce the pasta close to serving. Refrigerate leftovers promptly and reheat gently with a splash of water.

What to serve with it

  • Serve as a first course before a simple roast or vegetable dish.
  • Pair with a crisp salad or bitter greens to balance the pasta.

Ways Larry changes it up

Swaps, shortcuts and regional versions of meatball casserole.

Make-ahead without a guessed chilled-tray time

Fully cook the filling and base, then refrigerate promptly in shallow containers. Assemble shortly before reheating, using a dish rated for the temperature transition. A cold casserole needs longer than the fresh-assembly estimate: heat throughout to 165°F (74°C), checking the center and several spots. Preparation does not restart the 3–4-day cooked-leftover clock.

For a potluck table

Transport with safe temperature control. Hold hot food at 140°F (60°C) or above and cold food at 40°F (4°C) or below; otherwise apply the 2-hour limit, or 1 hour above 90°F (32°C). Use clean utensils. Doubling ingredients needs two suitably sized dishes, not a deeper tray with the same assumed bake time.

Ingredient changes

Follow this meatball casserole formulation first. Cheese changes alter salt and melting; check every product for wheat, dairy, egg, fish or other allergens as applicable. A poultry substitution needs 165°F; a meatless replacement needs its own moisture and seasoning adjustment. No substitution guarantees allergy safety.

Meatball Casserole: common questions

What goes in meatball casserole?
This recipe combines cooked meatballs and their sauce with cooked pasta, tomato sauce and cheese. Use the full ingredient list for measured amounts and six servings.
Can I assemble it with raw pasta, rice or meat?
No. Follow the prepared-base and filling steps. Pasta, rice and polenta must be cooked as directed; meat and fish must reach their stated safe temperatures before the finishing bake.
Can I make it ahead?
Yes, after fully cooking the base and filling and refrigerating promptly in shallow containers. Reheat a cold assembly throughout to 165°F; the fresh warm-assembly bake estimate does not apply unchanged.
Why is my casserole watery?
Undrained ingredients, wet vegetables or a thinner sauce can add excess liquid. Drain the stated ingredients and cook off vegetable moisture before assembly; resting alone cannot correct unlimited extra liquid.
How do I scale it for a crowd?
Use the serving control to scale measured ingredients. Larger quantities need additional suitable pans and temperature checks, not the same time in an overfilled dish.
How long do leftovers keep?
Use promptly refrigerated cooked leftovers within 3–4 days at 40°F or below. Reheat throughout to 165°F and do not reset the storage clock by assembling a new dish.
