How Long to Cook Sausage and Peppers

Short answer

Sausage and peppers takes about 30 to 40 minutes total. Brown whole sausages 10 to 12 minutes over medium heat, soften peppers and onions 12 to 15 minutes, then simmer everything together 8 to 10 minutes until the sausage reaches 160°F (71°C) in the center.

Cook times by method

Skillet (cast iron, medium heat): 30–40 minutes total. Brown the sausage 10–12 minutes, remove, cook peppers and onions 12–15 minutes, return the sausage and simmer 8–10 minutes.

Oven at 400°F (205°C): 35–40 minutes on a sheet pan, tossed once at the 20-minute mark.

Grill over medium direct heat: 12–16 minutes for the sausage, turning every 3–4 minutes, with the peppers in a grill basket for 10–12 minutes.

Slow cooker on low: 4–5 hours, but brown the sausage in a skillet first or the color and the crust never happen.

The only number that matters

Time is a guess. Temperature is the truth. Italian sausage is done at 160°F (71°C) in the thickest part — check with an instant-read thermometer through the end of the link, not the side, so the juices stay inside.

Pulled at 160°F the sausage is juicy. At 175°F it is a fine chew toy. Larry has made both.

Why sausage and peppers takes longer than you think

Peppers hold a lot of water. Crowd the pan and they steam instead of caramelizing, which adds 10 minutes and takes away all the browning. Cook in two batches if your skillet is smaller than 12 inches.

Sliced sausage cooks in roughly half the time of whole links — about 6–8 minutes — but loses juice. Larry browns whole, then slices on the bias at the end.
