Eggplant & Chickpea Bake
Prepare the filling first; the cheese finish is not proof of doneness.

The short version
Eggplant & Chickpea Bake with measured ingredients, a prepared filling and a melted-cheese finish. An original italian-inspired home formulation, not kitchen-tested; timings are estimates and the photo is illustrative.

Ingredients
- 2 tablespoons olive oil
- 3 cups prepared tomato sauce
- 1 1/2 cups shredded low-moisture mozzarella
- 1/4 cup grated Parmesan
- 1/4 teaspoon black pepper
- 1 large eggplant (about 1 lb), cut into 1-inch cubes
- 2 cans chickpeas (15 oz each), drained and rinsed
Instructions
- 01
Prepare the base. Heat oven to 375°F (190°C), or start at the higher roasting temperature specified in the filling step. Lightly oil a 9-by-13-inch baking dish from the measured oil. Set out the drained or cooked ingredients; no dried beans or lentils go directly into this tray.
- 02
Prepare the filling. Toss eggplant with the oil on a rimmed sheet pan. Roast at 425°F (220°C) for about 25–30 minutes, turning once, until tender. Lower oven to 375°F (190°C) for assembly.
- 03
Assemble the tray. Combine the roasted eggplant and drained chickpeas with sauce and pepper, or layer as specified in the filling step. Use half the shredded cheese within the mixture or layers. Transfer to the dish and top with remaining shredded cheese and Parmesan.
- 04
Bake the warm assembly. Bake at 375°F (190°C) about 20–25 minutes until hot through and the cheese has melted with some golden patches. If the top colors too fast, loosely cover with foil. All meat or fish must have met its safe internal temperature in the filling step. This estimate is for freshly assembled, warm ingredients, not a chilled tray.
- 05
Serve and store. Rest about 5 minutes and divide into six servings. Refrigerate perishables within 2 hours, or 1 hour above 90°F (32°C), in shallow containers. Keep refrigerated at 40°F (4°C) or below and use within 3–4 days. Reheat leftovers throughout to 165°F (74°C).
Larry’s rule: Cook moisture out of vegetables and follow the stated meat or fish temperature; melted cheese alone cannot establish doneness.
