Which potatoes
Yukon Gold is the best all-rounder: creamy inside, crisp outside, holds its shape.
Red potatoes hold up even better but are less flavorful. Russets fall apart and soak up fat — skip them here.
Cut everything the same size. Uneven chunks give you burnt corners and raw centers on the same pan.
Timing the pan
425°F. Potatoes alone for 15 minutes. Add peppers, onions and whole sausages, roast 25 to 30 more minutes, turning once.
Finish with a splash of red wine vinegar off the heat — it cuts the fat and wakes the whole pan up.

- No, if you give them a 15-minute head start in a hot oven. Parboiling 8 minutes first does make the outside crisper.
