Gluten-Free Sausage and Peppers

Short answer

The dish itself is gluten-free — sausage, peppers, onions, olive oil. The risk is in the sausage itself, since some brands use breadcrumb or wheat-based fillers, and in the roll. Buy links labeled gluten-free and serve over polenta, rice or a certified gluten-free roll.

The three things to check

The sausage. Most fresh Italian sausage is just pork, fat, salt and spices — but some brands add breadcrumbs, wheat starch or 'natural flavoring' carriers. Read the label or ask the butcher.

The roll. Standard Italian bread is out. Certified gluten-free rolls have gotten good; warm them or they crumble.

The pan sauce. Skip flour-thickened gravies; the dish never needed them. A splash of stock and the peppers' own liquid is the sauce.

Better gluten-free ways to serve it

Over soft polenta — arguably better than the sandwich, and naturally gluten-free.

Over rice or a baked potato, both of which soak up the pan juices.

As a sheet-pan dinner with quartered potatoes roasted alongside at 400°F for 35 minutes.

Over gluten-free pasta, cooked one minute short of the box time.

Cross-contamination in a shared kitchen

Toast gluten-free rolls on foil, not directly on a shared grill grate.

Use a clean pan and a clean spoon; sausage and peppers has no wheat contact of its own, so the risk is entirely from the environment.

Common questions

Is Italian sausage gluten-free?
Usually, but not always — some brands use breadcrumb or wheat-starch fillers. Check the label for a gluten-free claim.
What can I serve sausage and peppers on instead of a roll?
Soft polenta, rice, roasted potatoes, or gluten-free pasta all work and hold the juices well.
Are canned tomatoes gluten-free?
Plain canned tomatoes are. Prepared sauces sometimes are not — check seasoned or 'with herbs' varieties.
