Ingredients
- 12 oz dried fettuccine
- 3 tablespoons unsalted butter
- 2 garlic cloves, finely minced
- 1 cup heavy cream
- 1/2 cup whole milk
- 3 oz Parmesan, very finely grated
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 cup reserved pasta cooking water, used only as needed
Instructions
- 01
Prepare the pasta and cheese. Finely grate Parmesan before cooking. Boil fettuccine in salted water according to its package. Reserve 1 cup cooking water before draining; the pasta’s instructions determine its cooking time.
- 02
Warm the garlic. Melt butter in a wide skillet over medium-low heat. Stir in garlic for about 30–60 seconds until fragrant, without browning. Lower the heat if it begins to color.
- 03
Gently reduce the dairy. Add cream and milk. Bring to a gentle simmer, stirring, for about 4–6 minutes until slightly thickened. Do not boil hard. Timing varies with pan width and heat; it should coat a spoon lightly rather than become a paste.
- 04
Add cheese away from direct heat. Remove the skillet from the burner and let bubbling subside. Stir in Parmesan gradually until incorporated. Taste for salt and pepper. If grainy, stop heating and gently stir in a little warm pasta water; boiling will not repair overheated cheese.
- 05
Toss and serve. Add drained pasta and toss to coat. Loosen only as needed with reserved pasta water, a tablespoon at a time. Divide among four bowls and serve immediately; the sauce thickens as it cools.
Larry’s rule: Keep the simmer gentle and the cheese off direct heat. Copycat-style means inspired, not a promise of restaurant-identical flavor.
