Instructions

  1. 01

Brown the sausage. Brown the links in the oil in a large skillet over medium heat, about 8 minutes, turning. Set aside.

  2. 02

Cook the vegetables. Add peppers and onion to the fat with a pinch of salt and cook 12–15 minutes until soft and sweet. Add garlic and oregano for the last minute.

  3. 03

Finish the sausage. Slice the sausage into thick coins, return to the pan and cook until the pork reaches 160°F / 71°C.

  4. 04

Build. Lightly toast the rolls, pile with sausage, peppers and onions, add cheese if you like and serve warm.

Larry’s rule: Slice the sausage after browning, not before. Whole links stay juicy; coins cut raw dry out.

What to know about Sausage and Peppers Sliders

What it is

Sausage and Peppers Sliders is a antipasti recipe rooted in the generous Italian-American table. This version makes 12 sliders in 45 min and focuses on the technique that gives the dish its characteristic texture and flavor.

Why this method works

The method builds flavor in a deliberate order: brown the sausage, then cook the vegetables, then finish the sausage. Following that sequence keeps the main ingredients distinct while bringing the finished dish together.

Key ingredients and what they do

  • 1½ lbs sweet or hot Italian sausage links — builds the savory foundation and carries flavor through the dish.
  • 2 bell peppers (red and yellow), thinly sliced — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 1 large onion, thinly sliced — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 2 garlic cloves, sliced — provides the aromatic character; use it at the stage specified so it stays distinct.

Smart substitutions

For the most reliable result, keep the main ingredient and technique unchanged. Swap only like for like, then adjust salt, moisture and cooking time to taste.

Make ahead and leftovers

Prepare the components ahead and assemble near serving time to protect crisp and creamy textures.

What to serve with it

  • Serve before the meal with olives, cheese and bread.
  • Arrange as part of a larger antipasto spread.
