8 servings

View list

Instructions

  1. 01

Heat the oven. Heat the oven to 400°F (205°C). Split the loaf lengthwise and put both halves cut-side up on a baking sheet.

  2. 02

Mix the garlic butter. Stir softened butter with garlic, parsley and salt. Spread evenly over both cut surfaces, all the way to the edges.

  3. 03

Bake until golden. Bake uncovered for about 12–15 minutes, until the edges are golden and the butter has soaked into the crumb. Check early: loaf thickness and ovens vary. For a softer result, loosely cover with foil for the first 10 minutes, then uncover.

  4. 04

Portion and serve. Cut each half into four pieces and serve warm. For extra browning, use the broiler only briefly while watching constantly; garlic and bread can burn quickly.

Larry’s rule: Spread softened butter rather than pouring melted butter into one wet patch. Watch the garlic under the broiler.

What to know about Garlic Bread

What it is

Bake garlic bread with softened butter, fresh garlic and parsley. Choose a soft covered finish or crisp open-faced slices. This original home recipe has estimated times, not kitchen-test results; the image is illustrative.

Why this method works

Follow the ingredient preparation, cooking and finishing cues in the method. The timings are estimates; judge texture and doneness as described rather than treating this as a measured kitchen test.

Key ingredients and what they do

  • 1 Italian-style loaf, about 16 oz — supports the dish's balance, texture and regional character.
  • 6 tablespoons unsalted butter, softened — builds the savory foundation and carries flavor through the dish.
  • 4 garlic cloves, finely grated — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 2 tablespoons chopped flat-leaf parsley — provides the aromatic character; use it at the stage specified so it stays distinct.

Smart substitutions

For the most reliable result, keep the main ingredient and technique unchanged. Swap only like for like, then adjust salt, moisture and cooking time to taste.

Make ahead and leftovers

Prepare garlic butter and spread the loaf ahead, then cover and refrigerate. Bake near serving; keep the butter refrigerated.

What to serve with it

  • Serve warm at the table or use for sandwiches and crostini.
  • Cool fully before storing so the crust does not soften.

Larry’s why

Why the dough needs a slow, cold rise

A long rest in the fridge — 24 to 72 hours — lets enzymes break starch into sugar, which is what gives crust its colour and that faintly sweet, complex flavour. A fast warm rise makes gas but no taste. Time does the work you cannot fake with more yeast.

Larry’s rule: Less yeast, more time.

Ways Larry changes it up

Swaps, shortcuts and regional versions of garlic bread.

Cheesy garlic bread

Add a thin layer of shredded low-moisture mozzarella before baking for a variation. It changes the topping and may need a little longer to brown; check the bread underneath.

Serving ideas

Serve small pieces with spaghetti al pomodoro, shrimp scampi or sausage and peppers. Garlic bread is a side, not a requirement for every Italian meal.

Garlic Bread: common questions

What oven temperature works for garlic bread?
This version uses 400°F (205°C), with about 12–15 minutes of uncovered baking. Check earlier for a thin loaf.
Should I wrap garlic bread in foil?
Foil keeps it softer. Cover loosely for the first 10 minutes, then uncover; bake open-faced throughout for a crisper result.
Can I use garlic powder?
Yes, for a different flavor. Start with 1 teaspoon garlic powder in place of the four fresh cloves, mix thoroughly and adjust to taste before spreading.
Can I prepare garlic bread ahead?
Spread the loaf with garlic butter, cover and refrigerate until baking. Keep the butter refrigerated and bake near serving; oven time may increase when the loaf starts cold.
