Italian fried calamari: squid rings dredged in semolina flour and fried fast in hot oil, served with lemon only.

Ingredients

  • 1½ lbs squid, cut into rings
  • 1½ cups fine semolina flour
  • 1 cup milk for soaking
  • Sunflower oil for frying
  • Salt and lemon wedges

Instructions

    Soak. Soak the squid in milk for 20 minutes to tenderize, then drain well.

    Dredge. Toss in semolina and shake off every bit of excess in a sieve.

    Fry hot and fast. Fry at 365°F for 90 seconds in small batches until barely golden.

  4. 04

    Salt and serve. Drain on a rack, salt immediately and serve with lemon. No marinara.

Larry’s rule: Semolina, not flour. Flour goes soft in two minutes; semolina stays crisp long enough to finish the plate.
