Ingredients
- 1 lb (450 g) penne rigate
- 4 tbsp butter
- 1 small onion, minced fine
- 6 tbsp double-concentrated tomato paste
- ¼ cup (60 ml) vodka
- ¾ cup (180 ml) heavy cream
- ¾ cup grated Parmigiano-Reggiano
- Chili flakes and salt

Sweat the onion. Butter and onion over low heat for eight minutes until soft and sweet, never browned.

Cook the paste. Add the tomato paste and stir for four full minutes until it darkens to brick red. This is where the flavor comes from.

Vodka. Pour it in and let it bubble away for a minute — it strips the raw edge off the tomato and carries the aroma.

Cream and pasta. Cream in, then the penne cooked one minute under, plus a ladle of pasta water.

Cheese last. Off the heat, stir in the Parmigiano so it melts without splitting.
Larry’s rule: Use tube tomato paste, not canned sauce. Cooking the paste until it darkens is the entire difference between good and forgettable. No vodka in the house? Use water plus a squeeze of lemon — you lose a little sharpness, not the dish. The alcohol simmers off in the pan, and a pound of browned Italian sausage stirred in turns it into sausage vodka pasta.
