Sausage and Peppers on the Grill

Short answer

Set up two heat zones. Grill Italian sausages over indirect heat for 10 to 12 minutes, then finish over direct heat for 3 to 4 minutes to crisp the casing. Cook peppers and onions in a grill basket over direct heat for 10 to 12 minutes, tossing twice.

Two-zone setup

Bank the coals to one side, or leave half the gas burners off. Sausage cooked entirely over direct flame chars outside and stays raw inside — that's how casings burst.

Indirect first, direct last. Ten to twelve minutes on the cool side, then a fast sear for color.

Keeping the casings intact

Never pierce a sausage. Every hole is juice on the coals instead of juice in the sandwich.

Take the links out of the fridge 20 minutes early. Cold sausage hitting a hot grate contracts and splits.

The beer bath for a crowd

Put a disposable pan on the grill with sliced onions, peppers, and a bottle of beer. Grilled sausages go in the bath and hold at serving temperature for over an hour without drying out — the standard move at every Italian street fair.

Common questions

How long do Italian sausages take on the grill?
12 to 16 minutes total over medium heat, turning every 3 to 4 minutes, until they reach 160°F.
Should you boil sausage before grilling?
Not boil — simmer. A gentle 10-minute poach in beer or water guarantees a cooked center, then grill 4 to 5 minutes for color.
Can you grill peppers whole?
Yes. Blacken them whole over direct heat, steam them in a covered bowl for 10 minutes, then slip off the skins and slice.
