Instructions

  1. 01

Heat the oven and the pan. Put a rimmed sheet pan in the oven and preheat to 425°F. A screaming-hot pan is what gives you char instead of steam.

  2. 02

Season the vegetables. Toss the peppers, onions and garlic with the olive oil, oregano, red pepper flakes, salt and pepper directly on the hot pan.

  3. 03

Nestle in the sausage. Arrange the sausages on top of the vegetables with space between them — never pierce the casings.

  4. 04

Roast. Roast 30–35 minutes, turning the sausages and stirring the peppers once halfway, until the sausage reaches 160°F and the peppers are soft with charred edges.

  5. 05

Finish sharp. Splash the red wine vinegar over the hot pan, toss everything in the drippings and rest 5 minutes. Serve on rolls or over polenta.

Larry’s rule: Crowding is the only way to ruin this. If the pan looks full, split it across two — steamed peppers are a tragedy nobody needs.

What to know about Oven-Baked Sausage and Peppers

What it is

Oven-Baked Sausage and Peppers is a main recipe rooted in the generous Italian-American table. This version makes 6 servings in 45 minutes and focuses on the technique that gives the dish its characteristic texture and flavor.

Why this method works

The method builds flavor in a deliberate order: heat the oven and the pan, then season the vegetables, then nestle in the sausage. Following that sequence keeps the main ingredients distinct while bringing the finished dish together.

Key ingredients and what they do

  • 8 Italian sausages — hot, sweet or mixed — builds the savory foundation and carries flavor through the dish.
  • 4 bell peppers, sliced into thick strips — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 2 large onions, cut into wedges — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 3 cloves garlic, smashed — provides the aromatic character; use it at the stage specified so it stays distinct.

Smart substitutions

For the most reliable result, keep the main ingredient and technique unchanged. Swap only like for like, then adjust salt, moisture and cooking time to taste.

Make ahead and leftovers

Complete the advance work described in the method, refrigerate promptly, and reheat gently so the main ingredient does not dry out.

What to serve with it

  • Serve with roasted vegetables, bitter greens or a simple salad.
  • Add crusty bread when the pan sauce deserves to be saved.
