Instructions

  1. 01

Oil the pan. Pour 3 tbsp olive oil into a half-sheet pan. Stretch the dough toward the corners; if it springs back, rest 10 minutes and stretch again.

  2. 02

Brown the sausage. Crumble the sausage into a hot skillet and cook until browned and no longer pink, about 6 minutes. Lift it out and keep the fat.

  3. 03

Soften the peppers. Cook the peppers and onion in the sausage fat for 5 minutes until just tender. Season lightly with salt.

  4. 04

Make the sauce. Stir the crushed tomatoes with garlic, oregano, the remaining olive oil and a pinch of salt. It stays uncooked.

  5. 05

Top. Heat the oven to 475°F (245°C). Scatter mozzarella to the edges, then the sausage, peppers and onion. Spoon the sauce over in stripes or dollops.

  6. 06

Bake. Bake on the lowest rack 18–22 minutes until the bottom is crisp and the edges are browned. Finish with Pecorino and pepper flakes.

Larry’s rule: Cheese goes down before the sauce. That's the grandma trick — the sauce stays bright and the crust doesn't go soggy.

What to know about Grandma-Style Sausage and Peppers Pizza

What it is

Grandma-Style Sausage and Peppers Pizza is a pizza recipe rooted in the generous Italian-American table. This version makes 8 squares in 52 min and focuses on the technique that gives the dish its characteristic texture and flavor.

Why this method works

The method builds flavor in a deliberate order: oil the pan, then brown the sausage, then soften the peppers. Following that sequence keeps the main ingredients distinct while bringing the finished dish together.

Key ingredients and what they do

  • 1 lb pizza dough, at room temperature — supports the dish's balance, texture and regional character.
  • 4 tbsp olive oil, divided — builds the savory foundation and carries flavor through the dish.
  • ¾ lb sweet or hot Italian sausage, casings removed — builds the savory foundation and carries flavor through the dish.
  • 1 red and 1 green bell pepper, thinly sliced — provides the aromatic character; use it at the stage specified so it stays distinct.

Smart substitutions

Parmigiano-Reggiano is milder than Pecorino Romano. It can replace part of the pecorino, but the dish will be less sharp and salty.

Make ahead and leftovers

Make the dough ahead when the recipe allows. Refrigerate it covered, then bring it toward room temperature before shaping; bake topped pizza just before serving.

What to serve with it

  • Serve hot with a sharp green salad.
  • Cut into smaller pieces for an antipasto spread.

Larry’s why

Why the dough needs a slow, cold rise

A long rest in the fridge — 24 to 72 hours — lets enzymes break starch into sugar, which is what gives crust its colour and that faintly sweet, complex flavour. A fast warm rise makes gas but no taste. Time does the work you cannot fake with more yeast.

Larry’s rule: Less yeast, more time.
