Ingredients
- 1 1/2 cups Arborio or Carnaroli rice
- 5 cups low-sodium vegetable broth, kept hot and added as needed
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 cup finely grated Parmesan
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 12 oz peeled pumpkin or butternut squash, cut into 1/2-inch cubes
- 1/4 teaspoon dried rubbed sage
Instructions
- 01
Soften the pumpkin. Simmer the pumpkin in a separate small pan with 1 cup taken from the measured 5 cups of broth for about 10–15 minutes until tender. Return the reserved cooking liquid to the remaining broth; gently mash half the pumpkin.
- 02
Soften onion and toast rice. Warm the remaining oil (use 1 tablespoon for the mushroom version; otherwise 2 tablespoons) in a heavy pan. Soften onion for about 5 minutes. Add rice and stir for 2 minutes; do not rinse the rice.
- 03
Add broth gradually. Add a ladle of hot broth, stir regularly and add more as it is absorbed. Keep at a gentle simmer. Allow roughly 18–25 minutes after the first ladle; taste grains for a tender exterior and a slight firm bite. You may not need all the broth. Follow the vegetable step for its addition timing.
- 04
Finish off the burner. Fold in the tender pumpkin, sage, butter and cheese, loosening with hot broth. Remove from direct heat before adding cheese. Add hot broth as needed so the risotto spreads softly rather than standing in a mound. Taste for salt and pepper and serve immediately.
