Instructions

  1. 01

Cook the sausage. Grill or pan-sear the sausages until browned outside and cooked through, about 12 minutes.

  2. 02

Caramelize the vegetables. Sauté the peppers and onions in olive oil about 10 minutes, adding the garlic in the last minute.

  3. 03

Toast the rolls. Split the rolls almost all the way through and toast them lightly so they can hold the load.

  4. 04

Build. Split each sausage lengthwise, lay it in the roll, then pile on peppers and onions, a spoonful of marinara and plenty of provolone.

  5. 05

Broil. Broil 60–90 seconds, until the cheese bubbles and browns at the edges.

  6. 06

Finish. Top with Parmesan and a little Calabrian chili if you want heat. Serve immediately with napkins.

Larry’s rule: If you can eat it without leaning over the plate, you didn't put enough on it.

What to know about Sausage and Pepper Sandwich

What it is

Sausage and Pepper Sandwich is a bread recipe rooted in the generous Italian-American table. This version makes 6 sandwiches in 40 minutes and focuses on the technique that gives the dish its characteristic texture and flavor.

Why this method works

The method builds flavor in a deliberate order: cook the sausage, then caramelize the vegetables, then toast the rolls. Following that sequence keeps the main ingredients distinct while bringing the finished dish together.

Key ingredients and what they do

  • 6 hot or sweet Italian sausages — builds the savory foundation and carries flavor through the dish.
  • 2 red bell peppers, sliced — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 1 green bell pepper, sliced — provides the aromatic character; use it at the stage specified so it stays distinct.
  • 2 large onions, sliced — provides the aromatic character; use it at the stage specified so it stays distinct.

Smart substitutions

For the most reliable result, keep the main ingredient and technique unchanged. Swap only like for like, then adjust salt, moisture and cooking time to taste.

Make ahead and leftovers

Bake ahead, cool completely, and store airtight. Refresh briefly in a warm oven before serving.

What to serve with it

  • Serve warm at the table or use for sandwiches and crostini.
  • Cool fully before storing so the crust does not soften.
