Make the cream that isn't cream: Whisk the yolks, whole egg, pecorino and black pepper into a thick paste. 3. Cook the pasta: Boil the spaghetti in well-salted water until just shy of al dente. Reserve two cups of pasta water. 4. Temper: Whisk a few tablespoons of hot pasta water into the egg mixture to loosen and warm it. 5. Combine off the heat: Toss the drained pasta into the guanciale pan off the burner, pour in the egg mixture and toss hard, adding pasta water a splash at a time until glossy. 6. Pound the garlic and nuts: Crush the garlic and pine nuts with the coarse salt in a mortar until you have a smooth paste. A food processor works, but pulse cold and short. 2. Add the basil: Work the basil in a handful at a time, grinding against the sides of the mortar until it breaks down into a bright green cream. 3. Finish with cheese and oil: Stir in both cheeses, then drizzle in the olive oil until the sauce is loose and glossy. Never heat it. 4. Cook pasta with potato and beans: Boil the potato in salted water for 5 minutes, add the pasta, then add the green beans for the last 4 minutes so everything finishes together. 5. Toss off the heat: Drain, reserving a cup of water. Toss pasta and vegetables with the pesto in a warm bowl, loosening with pasta water until it coats every piece. ### Larry's tip Pesto goes in the bowl, not the pan. Bake the potatoes: Bake at 400°F for about 1 hour until fully soft. Baking keeps them dry — boiling makes them waterlogged and heavy. 2. Rice them hot: Halve, scoop and pass the flesh through a ricer onto a board. Spread out and let the steam escape for 5 minutes. 3. Make the dough: Sprinkle over the salt, yolk and most of the flour.
