Sausage and Peppers Pasta

Last updated

Short answer

Cook short pasta like rigatoni or penne. Meanwhile brown sliced or crumbled Italian sausage, soften peppers and onions in the same pan, add garlic and either crushed tomatoes or a splash of pasta water. Toss the drained pasta in the pan with grated Pecorino or Parmigiano and finish with herbs.

Pick the right pasta shape

Short tubes and ridges — rigatoni, penne, ziti, mezze maniche — catch pieces of sausage and pepper. Orecchiette works well with crumbled sausage. Long strands tend to drop the chunky bits on the plate.

Method for four servings

1. Bring a big pot of salted water to a boil for 1 pound of pasta.

2. Brown 1 pound of Italian sausage, casings removed and crumbled or sliced into coins, in olive oil for 6 to 8 minutes.

3. Add two sliced peppers and one onion; cook until tender, about 8 minutes. Add garlic for the last minute.

4. Red version: add a 14-ounce can of crushed tomatoes and simmer 10 minutes. White version: add a splash of white wine and let it reduce.

5. Cook the pasta a minute short of the package time, reserve a cup of the water, drain and toss in the pan, loosening with pasta water.

6. Off the heat, add a handful of grated cheese and torn basil or parsley.

Make it your own

Add a spoon of mascarpone or cream for a richer sauce, a handful of greens such as broccoli rabe for bitterness, or hot sausage and Calabrian chile for heat.

Common questions

Should I remove the sausage casing?
For pasta, removing it and crumbling the meat spreads flavor through the sauce. Slicing links into coins is fine if you prefer bigger bites.
Hot or sweet sausage for pasta?
Either works. Sweet lets the peppers shine; hot adds warmth. Many cooks mix the two.
How do I keep the sauce from being dry?
Use the starchy pasta water. Add a splash at a time while tossing until the sauce clings and looks glossy.
Can I make it ahead?
Make the sausage and pepper sauce ahead, then cook the pasta fresh. Fully combined pasta softens as it sits.
