Ingredients

  • 1 lb (450 g) ground beef chuck
  • ½ lb (225 g) ground pork
  • 3 oz (85 g) pancetta, finely chopped
  • 1 onion, 1 carrot, 1 celery stalk, all minced
  • 1 cup (240 ml) dry white wine
  • 1 cup (240 ml) whole milk
  • 3 tbsp tomato paste plus 1 cup passata
  • 2 cups (480 ml) beef broth

Instructions

    Soffritto. Pancetta rendered slowly, then onion, carrot and celery cooked 12 minutes until soft.

    Brown the meat. Add beef and pork and cook until no pink remains, breaking it fine. Do not rush it dry.

    Milk first. Pour in the milk and simmer until it is nearly gone. It tenderizes the meat — this step is not optional in Bologna.

    Wine, then tomato. Wine simmered off, then tomato paste, passata and broth.

    Four hours. Barest simmer, lid ajar, four hours. Add water if it tightens too far.
