Wine at the Table

Primitivo

The short answer

Primitivo is a ripe, full-bodied red wine from Puglia in southern Italy. The grape is genetically the same as California's Zinfandel.

Style
Ripe, jammy red, Puglia
Glass
Red wine glass
Strength
Often 13.5–15% ABV

Where it comes from

Primitivo is grown mostly in Puglia, the heel of Italy, with Primitivo di Manduria one of its best-known appellations. DNA research has shown Primitivo and Zinfandel are the same variety, which traces back to Croatia.

What you need

  • 1 bottle Primitivo, at cool room temperature

How Larry builds it

  1. 01

Serve cool. About 16–18°C (60–64°F) keeps the ripe fruit from tasting jammy.

  2. 02

Open ahead. Twenty minutes in the glass softens it.

  3. 03

Pair. Grilled meats, sausage, aged cheeses and hearty tomato dishes.

Larry’s rule: Grilled sausage loves this. So does Larry.

Variations worth making

  • Primitivo di Manduria

A well-known Puglian appellation, typically rich and powerful.

  • Zinfandel

The same grape grown in California.
