Ingredients
This recipe doesn’t list a serving count, so it scales by batch.
- 1 lb pizza dough, divided into 4
- ¾ lb Italian sausage, casings removed
- 1 red and 1 green bell pepper, diced
- 1 small onion, diced
- 1 cup whole-milk ricotta
- 6 oz low-moisture mozzarella, shredded
- ¼ cup grated Parmesan
- 1 egg, beaten
- 1½ cups marinara, warmed, for dipping
Instructions
- 01
Cook and cool the filling. Brown the sausage until cooked through, then soften the peppers and onion in the fat. Cool completely — warm filling makes the dough tear.
- 02
Mix the cheeses. Stir ricotta, mozzarella and Parmesan together. Fold in the cooled sausage and peppers.
- 03
Fill and seal. Roll each dough piece into an 8-inch round. Spoon filling onto one half, fold, and crimp the edge firmly with a fork.
- 04
Vent. Brush with egg and cut two small slits on top so steam can escape.
- 05
Bake. Bake on a parchment-lined sheet at 475°F (245°C) for 18–20 minutes until deep golden.
- 06
Rest. Rest 5 minutes before cutting. Serve with warm marinara on the side.
Larry’s rule: Keep the sauce outside. Marinara inside a calzone turns it into a steam bath.
