Times by setup

Thin links or chicken sausage: 9–12 minutes — they dry out fast, so check early.

Frozen links: thaw first. Straight from frozen they take 25–30 minutes and the casings usually split.

Medium heat is the whole trick

High heat blisters the casing before the centre reaches temperature, and rendered fat flares up and coats the sausage in soot.

If flare-ups start, move the links to the cool side and let them ride. A quiet fire makes a better sausage than a dramatic one.

Turn with tongs. A fork makes holes, holes leak fat, and fat is flavour.

Grill the peppers at the same time

Halve peppers and thick-cut onions, oil them lightly and put them on while the sausage cooks — 10–12 minutes, turned once.

Slide everything into a foil pan with a splash of the pepper juices and hold it at the edge of the grill until the buns are toasted.
