How Many Sausages Per Person?

Short answer

Plan on 1.5 Italian sausage links per adult as a main course, or 1 link per person when it is one dish among several. That is about 1/2 pound (225 g) of sausage per adult, plus 1 bell pepper and 1/2 onion each.

The per-person numbers

Main course: 1.5 links (about 1/2 lb / 225 g) per adult, 1 link per child.

Part of a buffet with pasta, salad and bread: 1 link per adult.

Sandwiches on 6-inch rolls: 1 link plus a heaping spoon of peppers fills one roll.

Peppers and onions: 1 bell pepper and 1/2 medium onion per person. They cook down by roughly half, so what looks like too much is right.

Shopping list by headcount

10 people: 15 links (5 lb), 10 peppers, 5 onions, 10 rolls, 1/2 cup olive oil.

20 people: 30 links (10 lb), 20 peppers, 10 onions, 20 rolls, 1 cup olive oil.

50 people: 75 links (25 lb), 50 peppers, 25 onions, 50 rolls, 2 1/2 cups olive oil.

Mix sweet and hot roughly 2 to 1. More people want sweet than say so out loud.

Cooking for a crowd without losing the crust

Do not crowd the pan. Brown in batches, then combine everything in a roasting pan and hold at 200°F (95°C) covered — it stays good for two hours.

For 20 or more, roast on sheet pans at 400°F (205°C): sausage on one, peppers and onions on another, combined at the end.

Add the rolls late. Toasted bread that waits an hour is a coaster.
