Instructions

    Infuse. Warm the milk, cream and lemon zest to a bare simmer and steep 20 minutes. Remove the zest.

    Custard. Whisk yolks and sugar pale, temper in the hot milk, then cook to 185°F / 85°C stirring constantly.

    Chill and age. Strain, cool fast over ice, then rest overnight in the fridge. Aging is what makes it smooth.

    Churn. Slowly — gelato takes less air than ice cream, which is why it tastes stronger.

    Serve warm-ish. Rest 10 minutes out of the freezer. Gelato is served around 10°F warmer than ice cream.
