Instructions

  1. 01

Warm the oil. Put the oil, peels, garlic, fennel, chili and herbs in a small pan over low heat for 3–4 minutes until fragrant. Do not let the garlic brown.

  2. 02

Add the olives. Stir in the olives and warm them through for 1–2 minutes.

  3. 03

Marinate. Tip into a bowl and leave at least 30 minutes, or refrigerate up to a week.

  4. 04

Serve. Bring back to room temperature and set out with a little dish for pits.

Larry’s rule: Serve them slightly warm. Warm oil carries the citrus and fennel — cold olives taste like the jar.

Before you cook

What to know about Olive Marinate

What it is

Olive Marinate is a antipasti recipe rooted in Italian home cooking. This version makes 6 servings in 10 min and focuses on the technique that gives the dish its characteristic texture and flavor.

Why this method works

The method builds flavor in a deliberate order: warm the oil, then add the olives, then marinate. Following that sequence keeps the main ingredients distinct while bringing the finished dish together.

Key ingredients and what they do

  • 2 cups mixed olives with pits (such as Castelvetrano and Gaeta), drained — supports the dish's balance, texture and regional character.
  • ⅓ cup extra-virgin olive oil — builds the savory foundation and carries flavor through the dish.
  • 3 strips orange peel and 2 strips lemon peel — brings acidity and aroma that balance richer ingredients.
  • 2 garlic cloves, lightly smashed — provides the aromatic character; use it at the stage specified so it stays distinct.

Smart substitutions

For the most reliable result, keep the main ingredient and technique unchanged. Swap only like for like, then adjust salt, moisture and cooking time to taste.

Make ahead and leftovers

Prepare the components ahead and assemble near serving time to protect crisp and creamy textures.

What to serve with it

  • Serve before the meal with olives, cheese and bread.
  • Arrange as part of a larger antipasto spread.
