Sausage and Peppers for a Crowd

Last updated

Short answer

Plan about one link (roughly ¼ pound) per person as a sandwich, or 1½ links as a main plate, plus about half a pepper and a quarter onion each. Cook in batches on sheet pans at 425°F or on the grill, then hold everything warm in a covered roaster or slow cooker with a little sauce or stock.

Quantities at a glance

These are planning estimates, not rules — hungry crowds and long parties eat more.

• 10 people: about 3 pounds sausage, 5 peppers, 3 onions, 10 rolls.

• 25 people: about 7 to 8 pounds sausage, 12 to 13 peppers, 6 to 7 onions, 25 rolls.

• 50 people: about 14 to 16 pounds sausage, 25 peppers, 12 to 13 onions, 50 rolls.

Best method for big batches

Sheet pans are the easiest indoor method: toss peppers and onions with oil and salt, spread with sausage links on top, and roast at 425°F for 30 to 40 minutes, turning once, until the sausage reaches 160°F. Do not crowd the pans or the vegetables will steam.

Outdoors, grill the sausage and cook the peppers and onions in a large flat-top or foil pans on the grates.

Holding it warm

Slice cooked sausage on the bias, combine with the vegetables in a roaster, slow cooker or chafing dish and add a splash of stock or tomato sauce to keep it moist. Keep hot food at 140°F or above, and do not leave it at room temperature for more than two hours.

Serving setup

Split rolls ahead, set out sharp provolone, hot cherry peppers, mustard and grated cheese, and let guests build their own. Tongs and a second roll pan stop the line from stalling.

Common questions

Can I cook it the day before?
Yes. Cook, cool quickly and refrigerate. Reheat covered at 350°F with a little liquid until steaming hot.
Should I precook sausage before grilling for a crowd?
Simmering links briefly before grilling shortens grill time and evens out doneness, which helps with big batches.
What sides go with it for a party?
Potato salad, a green salad, baked ziti or roasted potatoes are easy crowd sides.
How do I keep rolls from getting soggy?
Toast the cut sides lightly and let guests fill their own rolls just before eating.
