Ingredients

  • 4 lbs mussels, scrubbed and debearded
  • 4 garlic cloves, sliced
  • 1 cup dry white wine
  • 1 cup cherry tomatoes, halved
  • Chili flakes
  • Parsley and olive oil
  • Grilled bread

Instructions

    Clean properly. Scrub, debeard and discard any mussel that won't close when tapped.

    Start the base. Sizzle garlic and chili in olive oil, add tomatoes and cook 3 minutes.

    Steam. Add wine and mussels, cover and steam 5–6 minutes until they open.

    Finish. Toss with parsley and olive oil and serve with bread in the bowl.

Larry’s rule: Don't salt the pot. Mussels bring their own seawater, and you'll only find out too late.
