Labor Day weekend means the grill gets the call. The exact sausage lineup, the potato trick, and why the buns go on the grill last.
Labor Day is the last big cookout of the summer, and I treat it like a championship game. This weekend the skillet stays inside and the grill does the work. Twenty-three people RSVPed. That is not a sausage and peppers problem, that is a logistics problem, and logistics is where I live.
The lineup
- Half sweet, half hot Italian sausage. Never all hot — somebody's mother-in-law is coming.
- Two red, one green, one long hot pepper, cut wide so they don't fall through the grates.
- Potatoes, parboiled fifteen minutes before the grill even lights.
- Hero rolls, split but still hinged, toasted cut-side down at the very end.
The potato trick
Raw potatoes on a grill are a promise nobody keeps. Parboil them in salted water until a fork just meets resistance, drain them, and toss them in olive oil. Then they hit the grates and finish in ten minutes with actual char instead of forty minutes of raw centers and burnt skin. This one step is the difference between a cookout and a story people tell.
Grill the sausage, not the clock. 160 in the middle, color on the outside, and don't poke them — every hole is flavor leaving the building.
Why the buns go last
Everybody toasts the bread first and then lets it sit and go leathery while the meat cooks. Wrong order. The rolls go on the top rack for ninety seconds while the sausage rests. Warm bun, rested sausage, peppers straight off the heat — that is the plate. Do it in the wrong order and you made a sandwich. Do it right and you made an event.
What I'm testing after the holiday
- A grilled long hot pepper relish to bottle for the fall batches.
- Sheet pan sausage and peppers at 425°F versus the grill, side by side, blind taste test.
- Whether the cast iron griddle insert beats the open grates for the peppers. Early money is on the griddle.
