Sheet pan Italian sausage with peppers, onions and potatoes

One pan, one oven, one happy Larry

A sausage sheet pan dinner is sausage and peppers turned into a full meal — protein, vegetables and potatoes roasting together with almost no cleanup.

The high oven heat caramelizes the peppers and onions in the sausage drippings, so it tastes like a lot more work than it is.

Ingredients (4 servings)

4 servings
  • 1½ lb Italian sausage links
  • 1 lb baby potatoes, halved
  • 2 bell peppers, cut into chunks
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning, ½ tsp garlic powder, salt and pepper
  • Optional: 2 cups broccoli florets or zucchini chunks

Method

1. Heat the oven to 425°F (220°C) and line a large sheet pan with foil or parchment.

2. Toss potatoes with half the oil and seasoning and roast alone for 10 minutes — they need a head start.

3. Toss peppers, onion (and broccoli or zucchini) with the remaining oil and seasoning.

4. Add the vegetables and sausage links to the pan in a single layer. Don't crowd it.

5. Roast 20–25 minutes, flipping the sausages halfway, until browned and 160°F inside and the potatoes are crisp.

Easy swaps

  • Gnocchi instead of potatoes: add shelf-stable gnocchi with the sausage, no head start needed.
  • Sweet potatoes for a sweeter, fall version.
  • Chicken sausage: same time, check for 165°F.
  • Finish with balsamic glaze, fresh basil or grated Parmesan.

Common questions

What temperature do you bake sausage on a sheet pan?

425°F works best — hot enough to brown the sausage and crisp the vegetables in about 25 minutes.

How long does sausage take in the oven at 425°F?

About 20–25 minutes for raw Italian links, flipping halfway, until 160°F inside.

Do you need to precook potatoes for a sheet pan dinner?

No, but give halved baby potatoes a 10-minute head start so they finish at the same time as the sausage.

Can I meal prep a sausage sheet pan dinner?

Yes. It keeps 4 days in the fridge; reheat in the oven or air fryer to keep the potatoes crisp.
