What is Sugo?

Pronounced /SOO-goh/

Definition

Sugo is the general Italian word for sauce, most often a tomato-based one, from sugo di pomodoro to the Italian-American Sunday gravy.

Sugo finto ("fake sauce") is the meatless version — soffritto and tomato cooked long enough to taste like it had meat in it.

In Italian-American households the Sunday version simmers with sausage, meatballs, and braciole until the afternoon is gone.
