What is 'Nduja?

Pronounced /en-DOO-yah/

Definition

'Nduja is a soft, spreadable Calabrian pork salami loaded with roasted chile, spicy enough to season an entire dish with a spoonful.

It melts on contact with a hot pan, staining sauces bright red and adding heat plus cured-pork depth at the same time.

A tablespoon stirred into tomato sauce, spread under pizza cheese, or melted over roasted vegetables does more than a whole jar of chile flakes.
