Peperoncino is the small dried Italian hot chile, used whole or crushed, that supplies the heat in arrabbiata, aglio e olio, and hot sausage.
Bloom it in warm oil at the start of a dish rather than dumping it in at the end; the heat and aroma are fat-soluble.
Calabria grows the most famous ones, and Calabrian chiles packed in oil are the easiest high-quality version to buy in the US.
