Why do my sausages burst open when I cook them?
Sausages split because water inside turns to steam faster than the casing can stretch. Cook over medium heat, start them cold, turn them every 2 to 3 minutes, and never go straight from freezer to hot fire. Do not prick them — that fixes the split by draining the flavor.
