What is Salsiccia?

Salsiccia is fresh Italian pork sausage seasoned with salt, garlic, and fennel — sold sweet (dolce) or hot (piccante).
Grind is coarse and the fat ratio runs around 70/30, which is why it stays juicy at 160°F (71°C) and dries out fast above it.
Never split the links before cooking. The casing holds the fat where it belongs.
