What is Prosciutto?
Pronounced /proh-SHOO-toh/
Definition
Prosciutto is dry-cured ham; crudo is raw-cured and eaten sliced thin, cotto is cooked ham.
Prosciutto di Parma and San Daniele are the protected names, cured 12 to 36 months with nothing but salt, air, and time.
Do not fry it as a bacon substitute — with almost no fat to render, it turns leathery.
