Insaccati are "bagged" meats — everything stuffed into a casing, from fresh sausage to salami.

The category covers fresh (salsiccia), dry-cured (salame), and cooked (mortadella) products.

Natural hog casings, soaked and rinsed, are what give a homemade fresh sausage its snap.
