Where Do Italian Chefs Actually Eat on Vacation?

Ask a cook in Modena where to eat on a day off and nobody says the three-star place down the road. They say a spot with paper on the table, a handwritten menu, and one dish they have been doing since 1974. Chefs eat where the risk is low and the cooking is honest, because they already know what a kitchen under pressure tastes like.

The pattern, everywhere in Italy

• Short menus. Eleven items means the kitchen buys fresh and cooks daily. Forty items means a freezer.
• One region, one plate. They go where the town is famous for a single thing and they order that thing.
• Lunch, not dinner. The produce is at its best and the room is full of locals.

Stay in one region for the whole trip instead of collecting cities. Eat your big meal at lunch. Ask whoever pours your coffee where they eat on Sunday, and then actually go. Order the dish the town is named for, and skip anything with a photograph next to it.
