The skillet version builds supper from the bottom of the pan up: brown the links, soften peppers and onions in the same pan, then bring everything together in a short covered simmer. A splash of broth loosens the browned bits without turning the peppers into soup. This 2-serving version uses chicken sausage sausage. Use fresh, raw chicken sausage for this recipe, not a package labelled fully cooked. Brands vary in fat and seasoning; keep the measured olive oil and check doneness early. A wide skillet leaves enough space for this small batch; keep the vegetables spread out instead of piled on the links.

Thermometer first. Timer second.

Check the thickest part of every link with an instant-read thermometer: 165°F (74°C). Keep cooking any link below that temperature. Color and elapsed time do not establish doneness.

Total estimate: 45–50 minutes. Times vary with equipment and link thickness. These are written recipe adaptations, not measured kitchen tests.

Ingredients / 2

  • ¾ lb fresh raw chicken sausage
  • 1½ bell peppers, sliced into thick strips
  • 1 yellow onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoons olive oil
  • ½ teaspoon dried oregano
  • ¼ cup low-sodium chicken broth
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, to finish

Equipment

A wide skillet with a lid; an instant-read thermometer. Medium heat.

Let’s make supper

  1. 01

    Prep the batch

Start with refrigerated, fully thawed raw sausage. Slice the peppers and onions, mince the garlic and measure the remaining ingredients. A wide skillet leaves enough space for this small batch; keep the vegetables spread out instead of piled on the links.

  2. 02

    Brown the links

Heat the olive oil over medium heat. Brown whole sausages on all sides for about 6 minutes, in batches if needed. Transfer to a plate; they are not cooked through yet.

  3. 03

    Soften the vegetables

Cook peppers and onions in the same pan for 8–10 minutes, stirring. Add garlic and oregano for the final minute. Pour in the broth and scrape up the browned bits.

  4. 04

    Simmer and check

Return the links and their juices, cover and simmer gently for about 15 minutes. Check the thickest part of every link with an instant-read thermometer: 165°F (74°C). Keep cooking any link below that temperature. Color and elapsed time do not establish doneness.

  5. 05

    Reduce and finish

Remove cooked links while any others finish. Uncover the vegetables and reduce the juices for 3–5 minutes. Move cooked chicken links off the heat promptly once they reach 165°F. Slice only after a short rest so the juices stay with the meat.

The skillet rule: Brown first, combine later. Keep the simmer gentle and uncover at the end to reduce the pan juices.

How do I keep this skillet batch from going wrong?

Can I make these 2 servings ahead?

Refrigerate cooked food in shallow containers within 2 hours, or within 1 hour above 90°F. Use refrigerated leftovers within 3–4 days and reheat them to 165°F. Keep raw sausage separate from ready-to-eat foods.
