Trafilata al bronzo means pasta extruded through bronze dies, giving it a rough, chalky surface that grips sauce.
Teflon dies produce a smooth, glossy noodle that sauce slides off. Bronze dies drag the dough and leave microscopic ridges.
Paired with slow low-temperature drying, it is the single most reliable quality marker on a box of dried pasta.
