Fresh vs Dried Pasta

The short answer

Neither is better; they are different products. Fresh egg pasta is soft and rich, made for butter, cream, and ragù. Dried semolina pasta has the bite and rough surface that hold oil- and tomato-based sauces. In Italy both sit in the same kitchen for different dishes.

Fresh egg pasta

Soft wheat flour and eggs, rolled thin. Cooks in 2–4 minutes, tender and porous.

Dried semolina pasta

Durum semolina and water, extruded and slow-dried. Bronze dies give a chalky, sauce-gripping surface.

Look for 'trafilata al bronzo'

Bronze-die extrusion drags the dough and leaves a microscopically rough surface. Teflon dies produce a slick, glassy noodle that sauce slides off. On a box, the phrase to hunt for is trafilata al bronzo — it matters more than the brand.

Slow drying at low temperature is the second marker. It preserves the wheat flavor and gives the noodle its snap.

Match the shape to the sauce

Long, thin shapes want smooth sauces that coat: cacio e pepe, carbonara, clam sauce. Tubes and ridged shapes catch chunky sauces: amatriciana, arrabbiata, vegetable ragù.

Wide fresh ribbons want fat and meat. That is the entire logic behind tagliatelle al ragù rather than spaghetti bolognese, which is not an Italian dish.

Common questions

Is fresh pasta healthier?
No meaningful difference. Dried semolina is often slightly higher in protein.
Can I use fresh pasta for carbonara?
You can, but dried spaghetti gives the bite and the starchy water that make the sauce cling.
How much pasta water should I save?
A full cup. You will usually use a third of it, and there is no recovering it once the pot is drained.
