Definition
Gratinato describes a dish finished under high top heat with breadcrumbs or cheese until a browned crust forms.
In Italy the topping is usually breadcrumbs, olive oil, and parsley rather than a heavy blanket of cheese.
Two minutes under a broiler is the difference between a good baked dish and a memorable one.
