What is Al forno?

Definition
Al forno means baked in the oven — used for pasta al forno, pizza, and anything finished under top heat until browned.
Pasta al forno is boiled short of al dente, sauced, layered with cheese, and baked until the top is crisp and the edges are chewy.
The crisp corner of the pan is the prize, and everyone at the table knows it.
