Cast Iron vs Carbon Steel
The short answer
Cast iron holds heat longer and sears heavier; carbon steel heats faster, weighs about a third less, and responds to a burner dial like stainless. For sausage and peppers, cast iron wins. For eggs, fish, and fast weeknight sautés, carbon steel wins.

Heat retention is the whole argument
Drop six cold sausages into a hot pan and the pan temperature crashes. Cast iron's mass means it crashes less and recovers on its own, which is why the crust comes out even. Carbon steel crashes further, so you either cook in batches or nudge the burner up.
Flip the situation and carbon steel wins. Turning heat down actually lowers the pan temperature within seconds; a cast iron skillet will keep cooking at the old temperature for several minutes after you cut the flame.
Seasoning is identical — the myths are not
Both pans are bare iron protected by polymerized oil. Thin coat, wipe it almost dry, heat past the oil's smoke point, repeat. Soap is fine. Tomatoes are fine in short cooks on a mature pan. Long acidic braises will strip either one.
The only real difference is that carbon steel starts smoother, so it reaches a slick, egg-releasing surface in fewer rounds.
Which one to buy first
If you own neither, buy the 12-inch cast iron. It costs less, it will not warp, it goes into a 450°F oven for cornbread, and it is the right pan for the food this site is built around.
Add a 10-inch carbon steel second. It becomes the weeknight pan — eggs, fish, quick vegetables — and it is light enough to hold in one hand while you toss.

- After several rounds of seasoning it releases eggs cleanly. It is not PTFE non-stick; it needs a little fat and a hot pan.
- Can I use metal utensils on both?
- Yes. Metal spatulas actually help by polishing the seasoning flat.
