How We Review

Last updated

Every sausage and peppers review on this site is scored the same way, so you can compare a street-fair stand with a sit-down trattoria and know exactly why one beat the other.

The five criteria

  1. 1. Sausage quality — weight 30%

Snap of the casing, juiciness, seasoning (fennel, garlic, heat), and whether it tastes made with care.

  2. 2. Pepper & onion cook — weight 20%

Peppers soft but not mushy, onions sweet and jammy, some caramelized edges — not steamed and grey.

  3. 3. Bread — weight 15%

A roll that holds the juices without collapsing; crust and chew. Marked N/A for plated versions.

  4. 4. Sauce & flavor balance — weight 20%

Salt, fat, acid and heat in balance — whether that's tomato, vinegar peppers or just pan juices.

  5. 5. Value — weight 15%

Portion and quality relative to the price on the day of the visit.

How the overall score works

The overall score is a weighted average of the five criteria using the weights above, rounded to one decimal. If a criterion doesn’t apply — bread on a plated dish, for example — it is marked N/A and the remaining weights are scaled up proportionally so the score stays out of 10.
