What is All'onda?
Pronounced /all-OHN-dah/
Definition
All'onda means "like a wave" — the correct loose, flowing consistency for risotto when it is spooned onto a plate.
Tilt the pan: properly finished risotto should ripple and settle flat within a couple of seconds. If it holds a mound, it is too thick.
It thickens on the plate, so finish it looser than looks right and serve immediately in a warm shallow bowl.
